T\u2019expliquem les caracter\u00edstiques principals de cada tipus i la seva classificaci\u00f3. \u00a1Pren nota!<\/p>\n<h2>Caracter\u00edstiques nutricionals de la carn<\/h2>\n<p><strong>La carn \u00e9s una molt bona font de prote<\/strong>\u00ef<strong>nes d\u2019alt valor biol\u00f2gic. Sol contenir entre un 15 y un 25% de prote<\/strong>\u00ef<strong>nes en la seva composici\u00f3<\/strong>. El seu contingut en hidrats de carboni \u00e9s completament nul. D&#8217;altra banda, el contingut gras de la carn pot ser molt variable en funci\u00f3 del tipus de carn que \u00e9s, blanca o vermella, per\u00f2 sobretot variar\u00e0 segons l&#8217;esp\u00e8cie i la part de l&#8217;animal.<\/p>\n<p><strong>El colesterol, igual que en altres aliments d&#8217;origen animal, est\u00e0 molt present en la carn<\/strong>. I encara que \u00e9s cert que un exc\u00e9s de colesterol a la dieta pot ser perjudicial per a la salut, el colesterol \u00e9s necessari per a algunes funcions del cos. Encara que les quantitats de ferro varien en funci\u00f3 de l&#8217;esp\u00e8cie i tipus de carn, aquest ferro \u00e9s d&#8217;origen animal. El que significa que l&#8217;organisme l&#8217;absorbir\u00e0 m\u00e9s f\u00e0cilment.<\/p>\n<p>A m\u00e9s de minerals, la carn tamb\u00e9 <strong>posseeix un interessant contingut en vitamines, principalment les del complex B, sent la vitamina B12 una de les m\u00e9s importants.<\/strong><\/p>\n<p><strong>Es recomana consumir entre 3 i 4 racions de carn a la setmana en una dieta omn\u00edvora<\/strong>. Predomina el greix intramuscular, \u00e9s a dir, la que es troba acomodat entre les fibres musculars. Tamb\u00e9 cont\u00e9 greix visible en major quantitat que la carn blanca.<\/li>\n<li>El contingut cal\u00f2ric \u00e9s superior a la carn blanca a causa del major contingut en greix.<\/li>\n<li>Deuen la seva coloraci\u00f3 a la pres\u00e8ncia de mioglobina.<\/li>\n<li>Entre elles s&#8217;inclouen el porc, la vedella, el xai, el bou, el cavall i la cabra.<\/li>\n<li><strong>Es recomana consumir 1 o 2 racions de carn vermella a la setmana, triant les porcions m\u00e9s magres.<\/strong><\/li>\n<\/ul>\n<h2>Carn processada<\/h2>\n<ul>\n<li><strong>El seu contingut gras \u00e9s el m\u00e9s elevat, <\/strong>ja que, en la majoria de les vegades, s&#8217;utilitzen parts amb un contingut de teixit gras m\u00e9s alt.
