Avui et proposem un parell de receptes de tardor una mica m\u00e9s elaborades amb alguns dels aliments t\u00edpics d&#8217;aquesta temporada. Gaudeix-ne!<\/p>\n<h2>2 receptes de tardor amb vegetals<\/h2>\n<h3>Raviolis de mascarpone, pera i castanya amb salsa de bolets<\/h3>\n<p><strong>ingredients:<\/strong><\/p>\n<p>Per a la pasta:<\/p>\n<ul>\n<li>200 g de <a href=\"https:\/\/nomen.es\/ca\/semola\/semola-de-blat\/\">s\u00e8mola de blat Nomen<\/a><\/li>\n<li>1 ou<\/li>\n<li>Una cullerada sopera d&#8217;oli d&#8217;oliva<\/li>\n<li>Aigua<\/li>\n<\/ul>\n<p>Per al farciment:<\/p>\n<ul>\n<li>150 g mascarpone<\/li>\n<li>100 g pera<\/li>\n<li>50 g castanyes crues<\/li>\n<\/ul>\n<p>Per a la salsa:<\/p>\n<ul>\n<li>400 g de bolets variats<\/li>\n<li>100 g ceba<\/li>\n<li>20 g de mantega<\/li>\n<li>100 g brou de verdures<\/li>\n<li>Sal<\/li>\n<li>Pebre negre<\/li>\n<\/ul>\n<p><strong>Elaboraci\u00f3:<\/strong><\/p>\n<p>Prepara la salsa:<\/p>\n<ol>\n<li>Comen\u00e7a preparant la salsa, pela la ceba i talla-la a tires.<\/li>\n<li>En un pot afegeix la mantega i sofregeix una mica la ceba.<\/li>\n<li>Mentre es cuina, neteja b\u00e9 els bolets i talla a trossets. Afegeix-les a l\u2019olla al costat de la ceba, salpebra i salteja 10 minuts.<\/li>\n<li>Passats els 10 minuts, afegeix el brou de verdures i deixa que acabin de cuinar els bolets. Quan estiguin ben cuinats, apaga el foc i reserva.<\/li>\n<\/ol>\n<p>La massa de la pasta:<\/p>\n<ol start=\"5\">\n<li>Prepara la pasta dels raviolis com et vam explicar en l&#8217;article &#8220;<a href=\"https:\/\/nomen.es\/ca\/com-fer-pasta-fresca-casolana\/\">Com fer pasta casolana fresca<\/a>&#8220;.<\/li>\n<\/ol>\n<p>Prepara el farcit:<\/p>\n<ol start=\"6\">\n<li>Posa aigua escalfar en una olla.<\/li>\n<li>Mentre arrenca el bull, fes-li un petit tall a cada castanya.<\/li>\n<li>Quan l&#8217;aigua comenci a bullir, afegeix les castanyes i la pera i deixa que es cuinin durant 20 minuts. Despr\u00e9s, retira-la del foc i para la cocci\u00f3 amb aigua freda.<\/li>\n<li>D&#8217;una banda, pela les castanyes i pica-les. De l&#8217;altra, pela la pera i talla-la a dauets petits.<\/li>\n<li>En un bol, afegeix les castanyes, la pera i el mascarpone. Barreja b\u00e9 fins que estigui tot integrat. Reserva a la nevera.<\/li>\n<\/ol>\n<p>Prepara els raviolis:<\/p>\n<ol start=\"11\">\n<li>Treu la pasta de la nevera i estira amb el corr\u00f3 o amb l&#8217;ajuda d&#8217;una m\u00e0quina per estirar pasta.<\/li>\n<li>Quan tinguis la pasta ben estirada, divideix-la en dues parts m\u00e9s o menys iguals.<\/li>\n<li>Reparteix dosi de mitja cullerada de postres de farcit per una de les l\u00e0mines de pasta per formar els raviolis.<\/li>\n<li>Pinta amb ou batut al voltant del farcit perqu\u00e8 la pasta no s&#8217;obri. Col\u00b7loca la segona l\u00e0mina de pasta damunt i assegura&#8217;t que no queda aire a l&#8217;interior. Finalment, talla\u2019ls amb la forma que m\u00e9s t&#8217;agradi.<\/li>\n<\/ol>\n<p>Acaba el plat:<\/p>\n<ol start=\"15\">\n<li>Porta a ebullici\u00f3 els ingredients de la salsa abans de triturar-la b\u00e9 durant dos minuts.<\/li>\n<li>Mentre s&#8217;escalfa la salsa posa a bullir aigua per coure els raviolis. El temps de cocci\u00f3 d&#8217;aquests dependr\u00e0 de la seva grand\u00e0ria. Encara que el normal \u00e9s que es facin m\u00ednim uns 4 o 5 minuts perqu\u00e8 es cogui la s\u00e8mola. Finalment, serveix la pasta al costat de la salsa de bolets. Pots afegir un rajol\u00ed d&#8217;oli de t\u00f2fona negra per decorar i aportar aroma<\/li>\n<\/ol>\n<h3><\/h3>\n<h3>Risotto de carabassa i nous<\/h3>\n<p>Ingredients:<\/p>\n<ul>\n<li>300 g de carabassa pelada i sense llavors<\/li>\n<li>140 g <a href=\"https:\/\/nomen.es\/ca\/arros\/arros-de-cultiu-ecologic-nomen\/\">d&#8217;arr\u00f2s de cultiu ecol\u00f2gic Nomen<\/a><\/li>\n<li>250 g de brou vegetal<\/li>\n<li>40 g de nous<\/li>\n<li>Parmes\u00e0<\/li>\n<li>1 fulla de llorer<\/li>\n<li>Nou moscada<\/li>\n<li>Pebre negre<\/li>\n<li>Sal<\/li>\n<\/ul>\n<p><strong>Elaboraci\u00f3:<\/strong><\/p>\n<ol>\n<li>Talla la carabassa a dauets i cuina al vapor fins que quedi completament cuita.<\/li>\n<li>Trosseja una mica les nous.<\/li>\n<li>Un cop la carabassa estigui ben cuinada retira-la del vapor. Reserva \u00bc dels daus de carbassa i la resta xafa\u2019ls amb una forquilla i uneix-los al brou.<\/li>\n<li>Prepara una paella amb una mica d&#8217;oli i salteja una mica l&#8217;arr\u00f2s.<\/li>\n<li>A continuaci\u00f3, afegeix el brou barrejat amb la carabassa i un llorer i remou durant uns 20 minuts aproximadament.<\/li>\n<li>Condimentar amb sal, pebre i nou moscada.<\/li>\n<li>Quan quedin uns minuts afegeix el parmes\u00e0 en pols i barreja b\u00e9 perqu\u00e8 quedi integrat.<\/li>\n<li>Despr\u00e9s, retira la paella del foc, afegeix les nous trossejades i la carabassa i remou una mica.<\/li>\n<li>Deixa reposar un parell de minuts i serveix el risotto de carabassa.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>Gaudeix de les teves receptes de tardor quan vulguis i menja de temporada per aprofitar tot el sabor i les propietats que ens aporten les fruites i verdures d&#8217;aquesta estaci\u00f3!<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ja saps com introduir els aliments de tardor a la teva alimentaci\u00f3?
