{"id":11645,"date":"2020-09-30T08:22:54","date_gmt":"2020-09-30T07:22:54","guid":{"rendered":"https:\/\/nomen.es\/?p=11645"},"modified":"2020-09-30T08:26:52","modified_gmt":"2020-09-30T07:26:52","slug":"cous-cous-xai","status":"publish","type":"post","link":"https:\/\/nomen.es\/ca\/cous-cous-xai\/","title":{"rendered":"La recepta del mes: cous cous de xai"},"content":{"rendered":"<p>Si hi ha un plat de la cuina marroquina que ha traspassat fronteres, \u00e9s el cous cous (o cusc\u00fas, o cous-cous), una recepta t\u00edpica de la gastronomia \u00e0rab i dels pa\u00efsos del Magreb (Marroc, Alger, L\u00edbia, Maurit\u00e0nia i Tunis).<\/p>\n<p>La base del <a href=\"https:\/\/nomen.es\/ca\/altre\/cuscus-nomen\/\" target=\"_blank\" rel=\"noopener noreferrer\">cous cous<\/a> \u00e9s la <b>s\u00e8mola de blat dur<\/b>, que se serveix acompanyada de verdures i hortalisses, llegums i carns o peixos juntament amb el brou de cocci\u00f3 d\u2019aquests aliments. \u00c9s una recepta <b>molt completa a nivell nutricional<\/b>, perqu\u00e8 inclou tots els grups d\u2019aliments necessaris (hidrats de carboni dels cereals, prote\u00efnes de les carns, els peixos i els llegums i fibra dels vegetals).<\/p>\n<p>La recepta que et proposem avui \u00e9s una de les m\u00e9s tradicionals, <b>el cous cous marroqu\u00ed de xai<\/b>, tot i que la pots adaptar al teu gust i preparar-la amb altres tipus de carns, com el pollastre o el gall d\u2019indi, o fer una versi\u00f3 vegetariana nom\u00e9s amb verdures i llegums.<\/p>\n<p>El cous cous tradicional es prepara amb un estri especial, anomenat <b>couscousera<\/b>, que t\u00e9 una olla gran a sota i una cistella superior que encaixa amb l\u2019olla i t\u00e9 la base foradada per a cuinar al vapor. Si no tens couscousera, pots utilitzar una <b>olla amb vaporera<\/b>, l\u00b4\u00fanica cosa que has de tenir en compte \u00e9s que si els forats de la vaporera s\u00f3n massa grans i els grans de s\u00e8mola hi poden passar a trav\u00e9s, haur\u00e0s de posar un drap de cot\u00f3 fi sobre els forats per tal d\u2019evitar-ho.<\/p>\n<h2>Recepta de cous cous de xai<\/h2>\n<p><b>N\u00famero de comensals:<\/b> 6-8 persones<br \/>\n<b>Temps d\u2019elaboraci\u00f3:<\/b> 2 hores i 25 minuts<\/p>\n<h3>Ingredients para al cous cous de xai<\/h3>\n<ul>\n<li>1 kg i \u00bd de carn de xai desossada<\/li>\n<li>\u00bd kg de cous cous (s\u00e8mola de blat)<\/li>\n<li>200 gr de cigrons<\/li>\n<li>2 cebes<\/li>\n<li>1 alberg\u00ednia<\/li>\n<li>3 carbassons<\/li>\n<li>\u00bd kg de col<\/li>\n<li>200 gr de carbassa (polpa)<\/li>\n<li>200 gr de nap<\/li>\n<li>4 pastanagues<\/li>\n<li>3 patates<\/li>\n<li>5 tom\u00e0quets madurs pelats<\/li>\n<li>3 grans d\u2019all<\/li>\n<li>1 bitxo<\/li>\n<li>1 manat de coriandre<\/li>\n<li>1 branca d\u2019api<\/li>\n<li>1 manat de julivert<\/li>\n<li>1 cullerada de com\u00ed en pols<\/li>\n<li>1 cullerada de ras-el-hanout<\/li>\n<li>1 branca de canyella<\/li>\n<li>Safr\u00e0 en pols<\/li>\n<li>Pebre negre<\/li>\n<li>Oli d\u2019oliva<\/li>\n<li>Sal<\/li>\n<\/ul>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-11641\" src=\"https:\/\/nomen.es\/wp-content\/uploads\/2020\/09\/receta-cous-cous.jpg\" alt=\"Recepta cusc\u00fas\" width=\"900\" height=\"600\" srcset=\"https:\/\/nomen.es\/wp-content\/uploads\/2020\/09\/receta-cous-cous.jpg 900w, https:\/\/nomen.es\/wp-content\/uploads\/2020\/09\/receta-cous-cous-600x400.jpg 600w, https:\/\/nomen.es\/wp-content\/uploads\/2020\/09\/receta-cous-cous-300x200.jpg 300w, https:\/\/nomen.es\/wp-content\/uploads\/2020\/09\/receta-cous-cous-768x512.jpg 768w\" sizes=\"(max-width: 900px) 100vw, 900px\" \/><\/p>\n<h3>Elaboraci\u00f3 del cous cous de xai<\/h3>\n<ol>\n<li>Posa els cigrons en remull 12 hores abans de preparar la recepta.<\/li>\n<li>Pela 1 ceba i els alls. Renta l\u2019api. Pica tots tres ben menuts i sofregeix-los a l\u2019olla couscousera (o una olla amb estri per coure al vapor) amb una mica d\u2019oli d\u2019oliva.<\/li>\n<li>Renta i pica el coriandre i el julivert. Quan el sofregit anterior comenci a agafar color i la ceba estigui transparent, afegeix-los a l\u2019olla, amb la canyella, el ras-el-hanout, 1 culleradeta de pebre negre acabat de moldre i un polsim de safr\u00e0. Sofregeix durant 5 minuts, remenant amb una cullera de fusta.<\/li>\n<li>Neteja el xai de restes de greix i talla\u2019l a trossos del tamany d\u2019una mossegada. Salpebra\u2019ls al teu gust i afegeix-los a l\u2019olla per sofregir-los. Cuina\u2019ls durant 10 minuts, fins que estiguin daurats.<\/li>\n<li>Cobreix els ingredients de l\u2019olla amb aigua calenta, afegeix els cigrons remullats, un parell de culleradetes de sal i posa la part superior de la couscousera (o l\u2019estri foradat que serveix per a coure al vapor). Deixa coure a foc lent.<\/li>\n<li>Quan el contingut de l\u2019olla arrenqui el bull i vegis que ja surt vapor pels foradets de la vaporera, posa la s\u00e8mola de blat, pr\u00e8viament rentada, escorreguda i amanida amb un raig d\u2019oli d\u2019oliva, sal, pebre negre i com\u00ed en pols, ben distribu\u00efda per tota la vaporera. Tapa la couscousera i deixa coure 15 minuts.<\/li>\n<li>Passat aquest temps, posa la s\u00e8mola en una safata, remou-la amb una forquilla, mulla-\u00f1a amb una mica d\u2019aigua i rega-la amb una mica m\u00e9s d\u2019oli. Torna a posar-la a la vaporera i espera 15 minuts m\u00e9s. Repeteix aquesta operaci\u00f3 3 vegades en total.<\/li>\n<li>Afegeix la col rentada i trossejada a l\u2019olla inferior. Deixa coure 30 minuts.<\/li>\n<li>Afegeix el bitxo (si no t\u2019agrada el picant, no ho facis) i l\u2019altra ceba, pelada i a trossos. Deixa coure 20 minuts.<\/li>\n<li>Afegeix la resta de vegetals (l\u2019alberginia, els carbassons, els naps, les patates, la carbassa i els tom\u00e0quets), nets i a trossos. Rectifica de sal i pebre i deixa coure 20 minuts.<\/li>\n<li>Est\u00e9n el cous cous en una safata de servei i cobreix-lo amb el xai, les hortalisses i els cigrons, retirant-los del brou de cocci\u00f3 amb una escumadora (no cal que els escorris massa).
