Tamb\u00e9 ajuda a controlar el <b>colesterol<\/b>.<\/p>\n<p>La farina d\u2019arr\u00f2s s\u2019obt\u00e9 triturant el gra d\u2019arr\u00f2s sencer, un proc\u00e9s que dona com a resultat una farina fina i de color blanc uniforme que no cal tamisar. En receptes salades \u00e9s molt utilitzada per a fer <b>arrebossats<\/b> (com que t\u00e9 molt de mid\u00f3, absorbeix poca aigua i els arrebossats queden m\u00e9s cruixents), <b>pa, massa per a pizza<\/b> o per a <b>espessar salses o guisats<\/b>. Per\u00f2 amb farina d\u2019arr\u00f2s tamb\u00e9 pots preparar molts dol\u00e7os, des de <b>galetes, coques, creps o pans de pessic fins a farinetes per a nadons<\/b> o pasta casolana.<\/p>\n<p>Ara b\u00e9, la farina d\u2019arr\u00f2s, com altres farines sense gluten (de blat sarra\u00ed, de blat de moro, de teff\u2026) no reacciona igual que la de blat, precisament perqu\u00e8 el gluten \u00e9s el que proporciona esponjositat a les preparacions. \u00c9s una dada que has de tenir clara si vols preparar postres que hagin de llevar (cr\u00e9ixer amb l\u2019enfornat), perqu\u00e8 el resultat no ser\u00e0 mai el mateix que si les prepares amb farina de blat. Per\u00f2 d\u2019entre totes les opcions sense gluten, la farina d\u2019arr\u00f2s \u00e9s la m\u00e9s recomanable per a substituir la de blat perqu\u00e8 t\u00e9 un <b>sabor molt neutre<\/b> que no interfereix en el sabor final.<\/p>\n<p>Una dada b\u00e0sica a l\u2019hora de fer postres amb farina d\u2019arr\u00f2s \u00e9s que no pots fer servir la mateixa quantitat que hi posaries de farina de blat, hi has d\u2019<b>afegir una mica menys <\/b>precisament perqu\u00e8 como no te gluten, si fas servir la mateixa quantitat, les postres et quedaran endurides. L\u2019equival\u00e8ncia aproximada \u00e9s: <b>1 tassa de farina de blat = 7\/8 de tassa de farina d\u2019arr\u00f2s<\/b>. I els experts en rebosteria asseguren que si es barreja la farina d\u2019arr\u00f2s amb altres farines, el resultat encara \u00e9s millor. Si vols una recepta 100% sense gluten, prova a barrejar la farina d\u2019arr\u00f2s amb farina de teff, un cereal sense gluten originari d\u2019Eti\u00f2pia.<\/p>\n<p>Com sempre, la clau de l\u2019\u00e8xit \u00e9s provar, provar i provar. Afegeix la farina d\u2019arr\u00f2s i barreja. Afegeix 100 gr de mantega fosa i remena. Incorpora la llet atemperada i bat fins que s\u2019hagi incorporat. Greixa un motlle amb la mantega que queda, posa-hi la massa dins i enforna entre 45 i 50 minuts dins el forn precalentat a 180\u00b0. Deixa refredar el pa de pessic sobre una reixeta i posa-hi sucre glas pel damunt.<\/p>\n<h3>Galetes amb farina d\u2019arr\u00f2s<\/h3>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>175 gr de farina d\u2019arr\u00f2s<\/li>\n<li>75 gr de maizena<\/li>\n<li>100 gr de sucre<\/li>\n<li>75 gr de mantega<\/li>\n<li>1 ou L<\/li>\n<li>1 cullerada de postre d\u2019extracte de vainilla l\u00edquida<\/li>\n<li>Un polsim de sal<\/li>\n<\/ul>\n<p>Barreja les farines, afegeix el sucre, la mantega a trossos i la sal. Treballa la massa amb les mans fins a tenir una barreja sorrenca. Afegeix l\u2019ou, lleugerament batut, i la vainilla i barreja amb les mans. Forma una bola amb la massa, tapa-la amb film i deixa-la reposar mitja hora a la nevera. Enfarina (amb farina d\u2019arr\u00f2s) la superficie de treball y est\u00e9n la massa amb un corr\u00f3. Talla les galetes amb un tallapastes i posa-les sobre la safata del forn, forrada amb papel sulfuritzat. Enforna-les 10-12 minuts dins el forn precalentat a 180\u00b0, fins a que estiguin daurades. Deixa-les refredar sobre una reixeta i serveix-les fredes.<\/p>\n<h3>Farinetes de farina d\u2019arr\u00f2s<\/h3>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3\/4 d\u2019un got de llet de continuaci\u00f3 (o materna)<\/li>\n<li>1 culleradeta de farina d\u2019arr\u00f2s<\/li>\n<\/ul>\n<p>Dissol la farina d\u2019arr\u00f2s en la llet freda i cou-la a foc suau, sense parar de remenar, fins que la llet arrenqui el bull. Deixa atemperar les farinetes.
