El lleuger gust a nou de l\u2019arr\u00f2s salvatge i la seva textura cruixent s\u00f3n el contrapunt perfecte a la melositat de la carn, guisada lentament amb verdures, hortalisses, brou i vi negre. \u00c9s <b>f\u00e0cil de cuinar<\/b> i agradar\u00e0 a tothom!<\/p>\n<h2>Recepta d\u2019arr\u00f2s salvatge amb gulash de vedella<\/h2>\n<p>N\u00famero de comensals: 4 persones<br \/>\nTemps d\u2019elaboraci\u00f3: 1 hora i 45 minuts<\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>200 gr de <a href=\"https:\/\/nomen.es\/arroz\/arroz-salvaje-nomen\/\" target=\"_blank\" rel=\"noopener noreferrer\">arr\u00f2s salvatge Nomen<br \/>\n<\/a><\/li>\n<li>1 kg de vedella per a guisar (agulla, morcillo\u2026) a trossos<\/li>\n<li>4 tom\u00e0quets madurs pelats i ratllats<\/li>\n<li>2 cebes<\/li>\n<li>2 pastanagues<\/li>\n<li>1 pebrot vermell<\/li>\n<li>1 porro<\/li>\n<li>4 grans d\u2019all<\/li>\n<li>\u00bd litre de brou de carn<\/li>\n<li>\u00bc de litre de vi negre<\/li>\n<li>1 cullerada de pebre vermell<\/li>\n<li>\u00bd cullerada de com\u00ed en pols<\/li>\n<li>2 fulles de llorer<\/li>\n<li>1 grapat d\u2019anacards<\/li>\n<li>Julivert fresc<\/li>\n<li>Oli d\u2019oliva<\/li>\n<li>Sal y pebre<\/li>\n<\/ul>\n<h3>Elaboraci\u00f3:<\/h3>\n<ol>\n<li>Prepara les verdures i hortalisses. Pela les cebes i els dents d\u2019all i pica\u2019ls b\u00e9, el m\u00e9s petits que puguis. Enretira el peu i les primeres capes del porro i pica\u2019l ben menut. Pela les pastanagues, renta-les i talla-les a rodanxes. Renta el pebrot i talla\u2019l a trossos ben petits.<\/li>\n<li>Dora la carn de vedella uns minuts, en una cassola amb un fons d\u2019oli, pr\u00e8viament salpebrada. Quan estigui sellada (no fa falta que estigui del tot cuita, nom\u00e9s daurada per fora), afegeix la ceba, el porro, el pebrot i la pastanaga i cuina\u2019ls 5 minuts, remenant de tant en tant.<\/li>\n<li>Afegeix l\u2019all, el com\u00ed i el pebre vermell (pot ser dol\u00e7 o picant, en funci\u00f3 dels teus gustos) i cuina 2 minuts m\u00e9s. Afegeix tamb\u00e9 el tom\u00e0quet i espera a qu\u00e8 s\u2019hagi evaporat l\u2019aigua que deixa anar.<\/li>\n<li>Aboca el vi i el brou a la cassola, tamb\u00e9 les 2 fulles de llorer, tapa la cassola i deixa coure el guisat a foc lent durant 1 hora i \u00bd, remenant de tant en tant. Si veus que el guisat est\u00e0 quedant massa sec, pots afegir-hi una mica d\u2019aigua.<\/li>\n<li>Mentrestant, cou l\u2019arr\u00f2s salvatge en una cassola amb aigua salada, durant 30 o 40 minuts. Pots rentar l\u2019arr\u00f2s sota l\u2019aixeta d\u2019aigua freda per netejar-lo una mica abans de coure\u2019l. Quan estigui cuit, salta\u2019l lleugerament en una paella amb una mica d\u2019oli d\u2019oliva, sal i pebre negre acabat de moldre. Barreja\u2019l amb els anacards picats.<\/li>\n<li>Serveix una base d\u2019arr\u00f2s salvatge saltat i posa-hi al damunt el gulash de vedella, amb la salsa resultant de la cocci\u00f3 i les verdures. Si vols una presentaci\u00f3 individual, emplata l\u2019arr\u00f2s utilitzant un aro de cuina, per a fer un timbal, i posa-hi al damunt una racci\u00f3 de la vedella guisada amb verdures.
