El matambre \u00e9s en realitat un tipus de <strong>tall de carn de vedella t\u00edpic de l\u2019Argentina<\/strong>. Ja saps que la vedella no es talla igual a Espanya que a altres pa\u00efsos, i aix\u00f2 genera talls de carns diferents, amb caracter\u00edstiques variades a la cuina, que multiplica les possibilitats de fer receptes ben diferents. Per exemple, a l\u2019Argentina, d\u2019on \u00e9s originari el matambre, trobem talls de vedella com el bife, l\u2019entranya, el vac\u00edo o la tira. A Espanya, tenim talls com la culata, el cap de mort o el filet. De vegades es tracta de talls diferents, d\u2019altres vegades s\u00f3n la mateixa part de la vedella a la que se li donen noms diferents segons la zona geogr\u00e0fica.<\/p>\n<h2>D&#8217;on ve el nom de matambre?<\/h2>\n<p>Per\u00f2 tornem a l\u2019origen del matambre. \u00c9s una paraula composta per la uni\u00f3 de dos termes, matar i hambre. El seu origen es remonta al segle XIX, quan Europa s\u2019abastia de carn de vedella que importava de l\u2019Argentina. <strong>Als jornalers argentins se\u2019ls pagava amb trossos de carn sobrants<\/strong>, considerats de qualitat inferior, entre els que es trobava el matambre, una capa prima de carn enganxada al cuir i el costellam de l\u2019animal. Els treballadors aconseguien aix\u00ed \u201cmatar la gana\u201d amb aquesta carn \u2013en aquella \u00e8poca reconeguda com \u201cde segona\u201d\u2013 que acostumaven a cuinar a la brasa o sobre les cendres.<\/p>\n<p>Aquest tall de carn s\u2019anomena sobrebarriga a Col\u00f2mbia, malaya a Xile i a pa\u00efsos com Per\u00fa o Vene\u00e7uela es diu falda, igual que a Espanya. Al ser un tros de carn de poc gruix, <strong>es presta a fer farcits<\/strong>, tot i que avui en dia la majoria de farcits o enrotllats de carn de vedella es preparen amb una altra pe\u00e7a de la vedella, l\u2019aleta, oberta en forma de llibre, \u00e9s a dir tallada d\u2019una manera especial per a aconseguir que sigui menys gruixuda i es pugui farcir i enrotllar.<\/p>\n<h2>Recepta de matambre de vedella farcit al forn<\/h2>\n<p>N\u00famero de comensals: 6 persones<br \/>\nTemps d\u2019elaboraci\u00f3: 1 hora<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 aleta de vedella d\u20191,5 kg oberta en forma de llibre<\/li>\n<li>5 ous<\/li>\n<li>150 gr de beicon en llenques<\/li>\n<li>1 llauna de pebrots escalivats<\/li>\n<li>1 porro<\/li>\n<li>100 gr d\u2019espinacs<\/li>\n<li>Un gapat de festucs torrats pelats<\/li>\n<li>\u00bd got de vi blanc<\/li>\n<li>200 gr d\u2019<a href=\"https:\/\/nomen.es\/ca\/arros\/arros-salvatge-nomen\/\">arr\u00f2s salvatge Nomen<\/a><\/li>\n<li>80 gr de xampinyons<\/li>\n<li>80 gr de bolets shiitake<\/li>\n<li>Oli d\u2019oliva<\/li>\n<li>1 cullerada de maicena<\/li>\n<li>Sal<\/li>\n<li>Pebre<\/li>\n<\/ul>\n<p><strong>Elaboraci\u00f3:<\/strong><\/p>\n<ol>\n<li><strong>Cou els ous<\/strong> en una cassola amb aigua salada, durant 10 minuts. Enretira\u2019ls del foc, refresca\u2019ls amb aigua freda i despr\u00e9s, pela\u2019ls. Reserva\u2019ls sencers.<\/li>\n<li><strong>Neteja els espinacs<\/strong> de possibles restes de terra i salta\u2019ls en una paella amb un parell de cullerades d\u2019oli. Salpebra\u2019ls i barreja\u2019ls amb els festucs, picats. Reserva.<\/li>\n<li><strong>Pela i pica el porro<\/strong> en juliana. Salta\u2019l uns 5 minuts a la mateixa paella on has cuinat els espinacs, fins que estigui transparent.<\/li>\n<li><strong>Neteja les llenques de beicon,<\/strong> enretirant la corna i els possibles tendrums. Escorre els pebrots del seu l\u00edquid de conservaci\u00f3.<\/li>\n<li><strong>Ext\u00e9n la carn<\/strong> sobre la superficie de treball i salpebra-la al teu gust. Cobreix-la amb les llenques de beicon, lleugerament superposades entre elles, despr\u00e9s fes una capa de pebrots escalivats, una altra d\u2019espinacs saltats amb festucs, una altra capa de porro saltat i finalment, posa els ous cuits alineats en un extrem de l\u2019aleta.<\/li>\n<li><strong>Enrotlla la carn<\/strong> amb el farcit a dins, apretant una mica per a qu\u00e8 el rotlle quedi compacte. Lliga\u2019l amb fil de cuina, per a qu\u00e8 no s\u2019obri durant la cocci\u00f3.<\/li>\n<li><strong>Posa el rotlle<\/strong> de matambre a la safata del forn, tapa\u2019l amb paper sulfurat i enforna\u2019l 25 minuts a 180\u00baC. Passat aquest temps, destapa el rotlle i dona-li la volta. Rega\u2019l amb el vi i cou-lo destapat 20 minuts m\u00e9s.<\/li>\n<li><strong>Mentrestant, prepara la guarnici\u00f3.<\/strong> Posa \u00bd litre d\u2019aigua en una cassola, afegeix 1 cullerada d\u2019oli, l\u2019arr\u00f2s salvatge i fes-lo bullir. Remena, tapa la cassola i deixa coure a foc mig durant 30 minuts, fins que l\u2019arr\u00f2s hagi absorbit tot el l\u00edquid i s\u2019hagin reventat com a m\u00ednim la meitat dels grans.<\/li>\n<li><strong>Escorre l\u2019arr\u00f2s<\/strong> i reserva\u2019l. Neteja i pica els xampinyons i els shiitakes, salta\u2019ls en una paella amb un fons d\u2019oli d\u2019oliva i quan estiguin tendres, afegeix l\u2019arr\u00f2s i salta\u2019ls junts. Salpebra al teu gust.<\/li>\n<li><strong>Enretira la carn<\/strong> del forn i posa els sucs de la cocci\u00f3 en un cass\u00f3, a foc fort, per a qu\u00e8 redueixin. Afegeix 1 cullerada de maicena dissolta en agua t\u00e8bia, per a qu\u00e8 la salsa espesseixi una mica.<\/li>\n<li><strong>Enretira el fil<\/strong> de la carn i talla-la a rodanxes. Rega-la amb la salsa de vi i serveix-la amb l\u2019arr\u00f2s saltat amb bolets.<\/li>\n<\/ol>\n<h2>Variacions d\u2019aquesta recepta<\/h2>\n<p>Pots fer aquesta mateixa recepta, amb els mateixos ingredients, per\u00f2 utilitzats d\u2019una manera diferent. Per exemple, pots fer servir l\u2019<a href=\"https:\/\/nomen.es\/ca\/arros\/arros-salvatge-nomen\/\">arr\u00f2s salvatge<\/a> cuit i els bolets com a farcit de la carn i les verdures (el porro i el pebrot) saltats com a acompanyament. I per descomptat, pots fer <strong>farcits diferents amb altres ingredients<\/strong>, com pernil serr\u00e0 o ib\u00e8ric enlloc de beicon, utilitzar pebrot verd itali\u00e0 lleugerament saltat enlloc del pebrot vermell, afegir esp\u00e0rrecs verds o pastanaga tallada en bastonets al farcit\u2026 tens mil opcions!
