Aliments que tenen tantes propietats beneficioses per l\u2019organisme que, una vegada ets conscient de totes les coses bones que s\u00f3n capa\u00e7os d\u2019aportar, et sentir\u00e0s molt culpable si no els inclous de manera habitual en la teva dieta. La <a href=\"https:\/\/nomen.es\/ca\/gran-sl\/les-teves-receptes-amb-quinoa\/\" target=\"_blank\" rel=\"noopener\">quinoa<\/a> \u00e9s un d\u2019aquests aliments, com tamb\u00e9 la c\u00farcuma, les llavors de lli o de s\u00e8sam o les baies de Goji, entre molts d\u2019altres d\u2019una llarga llista.<\/p>\n<p>Per qu\u00e8 ens interessa la quinoa per damunt de tots els altres? Perqu\u00e8 \u00e9s un ingredient amb molts usos a la cuina i f\u00e0cil de preparar (tot i que amb algun truc, despr\u00e9s te l\u2019expliquem). De fet, en termes culinaris el ventall de possibilitats de la quinoa s\u2019assembla molt al de l\u2019arr\u00f2s.<\/p>\n<h2>Beneficis de la quinoa<\/h2>\n<p>De tota manera, la quinoa en realitat no \u00e9s un cereal, sin\u00f3 una <strong>llavor<\/strong>. El que els experts en nutrici\u00f3 anomenen pseudoceral. A la seva taula nutricional destaca, per exemple, que un 13% del seu pes s\u00f3n prote\u00efnes i un 69% hidrats de carboni. M\u00e9s coses?<\/p>\n<p>Proporciona una bona dosi de vitamines (B2 i B3) i minerals com ferro, magnesi, f\u00f2sfor, mangan\u00e8s, coure, zinc i potassi. \u00c9s un aliment sense gluten, per tant apte per a cel\u00edacs, i el seu gust neutre el fa molt indicat per a tots els p\u00fablics, inclosos els nens. Amb tot el que la quinoa pot fer per la teva salut, quan acabis de llegir aquest article anir\u00e0s corrent a la cuina a preparar una recepta amb quinoa.<\/p>\n<h2>Aix\u00ed es cuina (b\u00e9) la quinoa<\/h2>\n<p>La quinoa s\u2019ha de coure, com l\u2019arr\u00f2s o el cusc\u00fas. Tot i que cada fabricant marca les seves proporcions de l\u00edquid i de quinoa, la norma general \u00e9s coure la quinoa en el doble o triple de la seva mida en aigua o brou. \u00c9s a dir, 2-3 mides de l\u00edquid per 1 mida de quinoa. Consells b\u00e0sics.<\/p>\n<ul>\n<li><strong>Afegeix la quinoa<\/strong> al l\u00edquid de cocci\u00f3 quan hagi comen\u00e7at a bullir. Pots fer servir aigua mineral (millor que la de l\u2019aixeta, que en algunes zones pot tenir mal gust) o brou d\u2019au, de verdures o de peix, en funci\u00f3 de la recepta i dels ingredients amb que despr\u00e9s barregis la quinoa. Tamb\u00e9 pots bullir-la en aigua amb una pastilla de brou concentrat.<\/li>\n<li><strong>Tapa la cassola<\/strong> i no la destapis durant els 10 primers minuts (\u00e9s important no perdre el vapor que es genera durant la cocci\u00f3). Cou-la a foc mig.<\/li>\n<li>Passats els 10 primers minuts, <strong>controla la cocci\u00f3<\/strong>. La quinoa estar\u00e0 feta quan els grans es tornin transparents i el germen sigui visible (una mena de cueta en espiral). Acostuma a trigar entre 12 i 15 minuts. La textura \u00e9s lleugerament solta i cruixent.<\/li>\n<li>Pots <strong>afegir condiments<\/strong> a l\u2019aigua de cocci\u00f3, com un rajol\u00ed d\u2019oli d\u2019oliva, sal, llorer&#8230; Per\u00f2 ves amb compte, la quinoa \u00e9s com una esponja per als gustos, aix\u00ed que haur\u00e0s de trobar el punt just.<\/li>\n<li>Hi ha persones que, igual com es fa amb l\u2019arr\u00f2s, <strong>torren una mica la quinoa<\/strong> abans de coure-la, uns minuts en una paella amb una mica d\u2019oli d\u2019oliva. Diuen que aix\u00ed es potencia m\u00e9s el seu gust de fruit sec.<\/li>\n<\/ul>\n<h2>Errors comuns al coure quinoa:<\/h2>\n<ul>\n<li><strong>No seguir les indicacions del fabricant.<\/strong> Moltes vegades s\u2019aconsella esbandir la quinoa abans de coure-la (els grans estan coberts d\u2019una capa d\u2019una subst\u00e0ncia amargant, anomenada saponina, tot i que molts fabricants ja sotmeten la quinoa a un rentat previ a la seva comercialitzaci\u00f3 i aquest pas no \u00e9s necessari).<\/li>\n<li><strong>Passar-se de cocci\u00f3. <\/strong>El fet de no controlar massa b\u00e9 quin \u00e9s el punt \u00f2ptim de cocci\u00f3 fa que moltes persones optin per allargar el temps que bullen la quinoa. Error. Aix\u00ed nom\u00e9s s\u2019aconsegueix una pasta tova, gomosa i sense cap gr\u00e0cia. Un engrut, vaja.<\/li>\n<li><strong>Rentar-la sota l\u2019aixeta despr\u00e9s de coure-la. <\/strong>No cal, nom\u00e9s aconseguir\u00e0s treure-li gust. Deixa-la reposar uns minuts i despr\u00e9s separa-la una mica amb una forquilla.<\/li>\n<li><strong>Cuinar-ne molta quantitat. <\/strong>Una tasseta sembla tan poc&#8230; per\u00f2 com l\u2019arr\u00f2s, la quinoa creix amb la cocci\u00f3, tingues-ho amb compte. Si tot i aix\u00f2 ja has cuinat quinoa de m\u00e9s, no et preocupis. Si la guardes b\u00e9 en un recipient herm\u00e8tic es conservar\u00e0 fins a 4 dies a la nevera.
