I, si encara et resisteixes a qu\u00e8 s\u2019acabi l\u2019<strong>estiu<\/strong> (culin\u00e0riament parlant), seguir\u00e0s preferint <strong>plats frescos, r\u00e0pids o ex\u00f2tics<\/strong>, que sembla que et facin viatjar amb els gustos i que estiguis encara de vacances. Doncs la recepta que et proposem avui acompleix tots els requisits, tant si ja est\u00e0s cansat de tanta calor i amanides d\u2019estiu com si ets dels que viurien en un estiu etern.<\/p>\n<p>I \u00e9s que <strong>\u00e9s un plat que ho t\u00e9 tot<\/strong>: s\u2019elabora amb productes molt habituals en la nostra gastronomia, com <strong>l\u2019arr\u00f2s, les gambes, les verdures i el bacall\u00e0<\/strong>. Per\u00f2 li donem un toc ex\u00f2tic amb el curri, la llet de coco, el gingebre, els anacards i la varietat d\u2019<a href=\"https:\/\/nomen.es\/ca\/arros\/arros-basmati\/\" target=\"_blank\" rel=\"noopener\">arr\u00f2s basmati de Nomen<\/a> (ja saps, un arr\u00f2s conreat a les valls de l\u2019Him\u00e0laia que \u00e9s molt arom\u00e0tic). Si en vols saber m\u00e9s, sobre aquest delici\u00f3s arr\u00f2s, no et perdis el nostre article sobre <a href=\"https:\/\/nomen.es\/ca\/com-cuinar-arros-basmati\/\" target=\"_blank\" rel=\"noopener\">com cuinar amb arr\u00f2s basmati<\/a>.<\/p>\n<h2>Recepta d\u2019arr\u00f2s basmati al curri amb gambes, bacall\u00e0 i anacards:<\/h2>\n<p>Nombre de comensals: 4 persones<br \/>\nTemps d\u2019elaboraci\u00f3: 55 minuts<\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>&#8211; 250 g d\u2019<a href=\"https:\/\/nomen.es\/ca\/arros\/arros-basmati\/\" target=\"_blank\" rel=\"noopener\">arr\u00f2s basmati Nomen<\/a><\/li>\n<li>&#8211; 200 g de bacall\u00e0 al punt de sal<\/li>\n<li>&#8211; 12 cues de gambes<\/li>\n<li>&#8211; 1 ceba<\/li>\n<li>&#8211; \u00bd pebrot verd<\/li>\n<li>&#8211; 1 all<\/li>\n<li>&#8211; 1 trosset de gingebre<\/li>\n<li>&#8211; 1 cullerada de curri en pols<\/li>\n<li>&#8211; 1 pot de llet de coco<\/li>\n<li>&#8211; 1 grapat d\u2019anacards torrats<\/li>\n<li>&#8211; Oli d\u2019oliva<\/li>\n<li>&#8211; Sal i pebre<\/li>\n<li>&#8211; Una branqueta de coriandre<\/li>\n<\/ul>\n<h3>Elaboraci\u00f3:<\/h3>\n<ol>\n<li><strong>PREPARA L\u2019ARR\u00d2S<\/strong>. Posa\u2019l en un colador i esbandeix-lo diverses vegades fins que l\u2019aigua surti neta. Despr\u00e9s, cou-lo en un cass\u00f3 amb aigua bullent (amb el doble d\u2019aigua que d\u2019arr\u00f2s), sal i un parell de cullerades d\u2019oli d\u2019oliva. Remena una mica i deixa que es cogui a foc lent durant 10 minuts.<\/li>\n<li><strong>ESCORRE L\u2019ARR\u00d2S<\/strong>. Passat el temps de cocci\u00f3, escorre l\u2019arr\u00f2s, passa\u2019l a una safata ampla, remena\u2019l una mica perqu\u00e8 quedi solt i reserva\u2019l.<\/li>\n<li><strong>PREPARA ELS VEGETALS<\/strong>. Pela la ceba i pica-la ben petita. Pela l\u2019all, enretira el germen interior i pica\u2019l tamb\u00e9. Renta el pebrot, elimina\u2019n les llavors i les nervadures interiors i pica\u2019l. Ratlla una mica de gingebre (amb 1 cullerada de postres en tindr\u00e0s prou, \u00e9s molt arom\u00e0tic).<\/li>\n<li><strong>FES LA SALSA<\/strong>. Posa una cassola al foc, amb un parell de cullerades d\u2019oli, i sofregeix l\u2019all, la ceba, el pebrot verd i el gingebre. Quan la ceba comenci a estar transparent, afegeix el curri i remena b\u00e9. Afegeix tamb\u00e9 la llet de coco, posa sal al teu gust i deixa coure a foc lent uns minuts.<\/li>\n<li><strong>PREPARA EL PEIX.<\/strong> Neteja el bacall\u00e0 de possibles restes d\u2019espines i pell. Talla\u2019l a trossos de mossegada, tots de la mateixa mida perqu\u00e8 es coguin igual. Enretira l\u2019intest\u00ed de les cues de gamba i renta-les. Salpebra-les.<\/li>\n<li><strong>AFEGEIX EL PEIX.<\/strong> Quan la salsa comenci a bullir, afegeix el bacall\u00e0 i remena una mica. Veur\u00e0s que canvia r\u00e0pidament de color, es posa blanquin\u00f3s, \u00e9s el moment d\u2019afegir tamb\u00e9 les gambes. Apaga el foc i reserva, tapat, 2-3 minuts.<\/li>\n<li><strong>AFEGEIX L\u2019ARR\u00d2S. <\/strong>Afegeix l\u2019arr\u00f2s basmati cuit a la cassola i remena amb compte perqu\u00e8 es barregi amb la resta d\u2019ingredients, per\u00f2 sense trencar el peix.<\/li>\n<li><strong>SERVEIX EL PLAT.<\/strong> Serveix l\u2019arr\u00f2s basmati en plats individuals, repartint-ne el bacall\u00e0 i les gambes. Distribueix uns anacards torrats picats i una mica de coriandre fresc picat.<\/li>\n<\/ol>\n<h3>Alternatives a alguns ingredients<\/h3>\n<p>Com qualsevol altra recepta, aquesta tamb\u00e9 \u00e9s susceptible de ser modificada en funci\u00f3 dels gustos dels comensals. T\u2019expliquem com fer-la amb uns altres ingredients:<\/p>\n<p><strong>&#8211; Vegetals:<\/strong> l\u2019all li dona molt bon gust, per\u00f2 si tens problemes amb ell perqu\u00e8 no se\u2019t posa b\u00e9 o et torna, pots eliminar-lo sense problema (prova de substituir-lo per una miqueta d\u2019all en pols, no \u00e9s el mateix, per\u00f2 queda m\u00e9s suau). La ceba pots substituir-la per ceba tendra o porro. I el pebrot verd tamb\u00e9 \u00e9s opcional. Si t\u2019agrada m\u00e9s el vermell, pots fer-lo servir en el seu lloc. O, directament, no posar pebrot al plat. Per descomptat, pots afegir altres verdures i hortalisses al plat: des de pastanaga a p\u00e8sols, carxofes, br\u00f2quil o coliflor&#8230;<\/p>\n<p><strong>&#8211; Llet de coco:<\/strong> si no t\u2019agrada el sabor que proporciona la llet de coco, pots fer una salsa m\u00e9s tradicional fent servir brou vegetal o de peix. Aix\u00f2 s\u00ed, per a donar-li consist\u00e8ncia a la salsa (la llet de coco \u00e9s bastant densa i proporciona una textura consistent, no l\u00edquida), haur\u00e0s d\u2019afegir una mica de farina de blat de moro perqu\u00e8 faci d\u2019espessidor.<\/p>\n<p><strong>&#8211; Peixos:<\/strong> en lloc de gambes, pots fer servir cues de llagostins o gambots, tamb\u00e9 quedar\u00e0 un plat molt bo. El bacall\u00e0 \u00e9s m\u00e9s dif\u00edcil de substituir pel que fa al seu gust, que \u00e9s molt peculiar, per\u00f2 qualsevol peix blanc com rap, llu\u00e7, reig, orada o llobarro pot ser una bona opci\u00f3.<\/p>\n<p><strong>&#8211; Anacards:<\/strong> la funci\u00f3 dels anacards, a m\u00e9s del seu evident gust, \u00e9s aportar un toc cruixent i el greix saludable dels fruits secs.
