A m\u00e9s del gall d\u2019indi, tamb\u00e9 <strong>et proposem un acompanyament<\/strong> que agradar\u00e0 a grans i a petits: un <strong>arr\u00f2s basmati delici\u00f3s, saltat amb panses i ceba caramelitzada<\/strong>.<\/p>\n<p>Un dels punts a favor d\u2019aquesta recepta, a m\u00e9s d\u2019estar bon\u00edssima, \u00e9s que una vegada has fet el farcit i l\u2019acompanyament i has posat <strong>el gall d\u2019indi al forn<\/strong>, s\u2019ha acabat la feina! Aix\u00ed pots dedicar-te a acabar els preparatius de la taula, arreglar-te i fins i tot gaudir de l\u2019aperitiu amb els teus convidats.<\/p>\n<h2>Recepta de gall d\u2019indi de Nadal al forn amb arr\u00f2s basmati<\/h2>\n<p>N\u00famero de comensals: 10-12 persones<\/p>\n<p>Temps d\u2019elaboraci\u00f3: 3 hores 45 minuts<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 gall d\u2019indi net de 4,5 kg aproximadament<\/li>\n<li>500 gr de carn picada de porc o de salsitxa<\/li>\n<li>12 prunes panses sense pinyol<\/li>\n<li>4 pomes<\/li>\n<li>4 cebes<\/li>\n<li>1 grapat de nous<\/li>\n<li>1 kg d\u2019<a href=\"https:\/\/nomen.es\/ca\/arros\/arros-basmati\/\">arr\u00f2s basmati Nomen<\/a><\/li>\n<li>100 ml de llet<\/li>\n<li>3 cullerades de mantega<\/li>\n<li>2 llesques de pa (millor si \u00e9s del dia abans)<\/li>\n<li>2 cullerades de sucre de canya<\/li>\n<li>300 ml de cava brut<\/li>\n<li>Oli d\u2019oliva<\/li>\n<li>Herbes arom\u00e0tiques (roman\u00ed, farigola&#8230;)<\/li>\n<li>Pebre de 3 colors<\/li>\n<li>Sal<\/li>\n<\/ul>\n<h3>Elaboraci\u00f3:<\/h3>\n<ol>\n<li><strong>PREPARA EL GALL D\u2019INDI. <\/strong>Neteja\u2019l b\u00e9 amb aigua, per dins i per fora, i despr\u00e9s asseca\u2019l amb paper de cuina. Salpebra\u2019l al teu gust.<\/li>\n<li><strong>ELABORA EL FARCIT. <\/strong>Remulla el pa amb la llet. Sofregeix 2 cebes, ben picadetes, en una paella amb un fons d\u2019oli, 8 minuts. Afegeix la polpa de les pomes, pelades i tallades a daus, i sofregeix 5 minuts m\u00e9s, fins que tinguin un color daurat. Retira-ho del foc i, quan s\u2019hagi refredat una mica, barreja-ho amb la carn picada, el pa escorregut i les prunes trossejades. Salpebra.<\/li>\n<li><strong>FARCEIX EL GALL D\u2019INDI.<\/strong> Introdueix el farcit preparat dins el gall d\u2019indi. Cus l\u2019obertura per a qu\u00e8 el farcit no surti durant la cocci\u00f3 i lliga les potes al cos amb fil de cuina per a qu\u00e8 no perdi la forma.<\/li>\n<li><strong>ENFORNA EL GALL D\u2019INDI. <\/strong>Posa el gall d\u2019indi en una plata de forn profunda, pr\u00e8viament engreixada amb oli o mantega. Rega amb el cava i enforna 3 hores a 180 \u00baC, regant-lo de tant en tant amb els sucs de la cocci\u00f3.<\/li>\n<li><strong>COU L\u2019ARR\u00d2S<\/strong>. Mentre el gall d\u2019indi est\u00e0 al forn, posa una cassola al foc amb 2 litres d\u2019aigua i sal. Afegeix una mica d\u2019oli d\u2019oliva o 2 cullerades de mantega. Quan l\u2019aigua comenci a bullir, afegeix l\u2019arr\u00f2s i cou-lo durant 10 minuts a foc lent. Despr\u00e9s, escorre\u2019l i remena per a qu\u00e8 quedi solt.<\/li>\n<li><strong>CARAMELITZA LA CEBA.<\/strong> Pela 2 de les cebes i talla-les a plomes. Escalfa un parell de cullerades d\u2019oli en una paella \u00e0mplia i sofregeix la ceba a foc molt lent. Quan comenci a estar transparent, afegeix 2 cullerades de sucre de canya i remena. Deixa caramelitzar a foc molt lent, fins que la ceba tingui un color torrat.<\/li>\n<li><strong>TORRA LES NOUS<\/strong>. Enretira la pelleta que les recobreix, trosseja-les ben menudes i posa-les a la placa del forn. Torra-les sota el grill uns 5 minuts a 150\u00baC, amb compte que no es cremin.<\/li>\n<li><strong>BARREJA ELS INGREDIENTS<\/strong>. Barreja l\u2019arr\u00f2s cuit amb la ceba caramelitzada i les nous torrades i reserva fins al moment de servir.<\/li>\n<li><strong>RENTA I ASSECA LES AROM\u00c0TIQUES<\/strong>. Pica-les ben menudes. Decora el gall d\u2019indi amb les herbes picades un cop l\u2019hagis enretirat del forn i serveix-lo amb l\u2019arr\u00f2s basmati saltat amb ceba caramelitzada i nous.<\/li>\n<\/ol>\n<h2>5 trucs perqu\u00e8 el gall d\u2019indi al forn et quedi delici\u00f3s:<\/h2>\n<ol>\n<li>Si veus que la pell es torra massa per\u00f2 que el gall d\u2019indi encara no est\u00e0 cuit, cobreix-lo amb paper d\u2019alumini o de forn.<\/li>\n<li>Per a que quedi ben torradet, pots recobrir el gall d\u2019indi amb llard o oli d\u2019oliva, abans de posar-lo al forn.<\/li>\n<li>Hi ha qui posa tamb\u00e9 mantega o llard per sota de la pell del gall d\u2019indi, separant-la pr\u00e8viament de la carn.<\/li>\n<li>Una altra manera d\u2019afegir un toc de sabor, si no vols regar el gall d\u2019indi amb cava, \u00e9s injectar-li una mica de brandy o conyac abans d\u2019enfornar-lo, en diverses parts del cos. Si ho fas, haur\u00e0s de regar-lo amb brou per a qu\u00e8 no es ressequi massa.<\/li>\n<li>Un gall d\u2019indi d\u2019uns 4 o 5 kg \u00e9s perfecte per a 10-12 comensals. Si sou menys, pots escollir un pollastre de pag\u00e8s o un cap\u00f3 i rebaixar una mica les quantitats de farcit i d\u2019acompanyament.
