Actualment hi ha una nova tend\u00e8ncia aliment\u00e0ria que consisteix a portar una dieta lliure de gluten sense causa m\u00e8dica aparent. Per\u00f2, qu\u00e8 \u00e9s el gluten? Per qu\u00e8 s&#8217;elimina de la dieta? Tot el que cal saber, en aquest post:<\/p>\n<h3><strong>\u00bfQU\u00c8 ES EL GLUTEN?<\/strong><\/h3>\n<p>El gluten \u00e9s la combinaci\u00f3 de dues prote\u00efnes presents en alguns cereals com el blat, l&#8217;ordi, l&#8217;espelta, el kamut i possiblement la civada, aix\u00ed com en els productes derivats d&#8217;aquests.<\/p>\n<p>Els cereals formen part de l&#8217;alimentaci\u00f3 di\u00e0ria de la poblaci\u00f3 dins d&#8217;un context de dieta variada i equilibrada, pel que \u00e9s important no eliminar-los. Existeixen varietats com l&#8217;<a href=\"https:\/\/nomen.es\/ca\/productes\/arrossos\/\" target=\"_blank\">arr\u00f2s<\/a>, el blat de moro, el mill, la quinoa o l&#8217;amarant que no contenen aquest nutrient en la composici\u00f3.<\/p>\n<p>Aquest nutrient <strong>es retira de la dieta en aquelles persones que, a causa d&#8217;una patologia, no poden consumir-lo.<\/strong><\/p>\n<h3><strong>MALALTIES RELACIONADES AMB EL GLUTEN \u00a0<\/strong><\/h3>\n<p style=\"padding-left: 30px;\">1. La <strong>malaltia cel\u00edaca<\/strong> o celiaquia \u00e9s una malaltia autoimmune, \u00e9s a dir, provocada per un error del nostre organisme en recon\u00e8ixer com a subst\u00e0ncia nociva el gluten, quan <strong>en realitat no ho \u00e9s<\/strong>. Presenta una base gen\u00e8tica i l&#8217;organisme de les persones que la pateixen, en consumir gluten, posa en marxa un seguit de mecanismes de defensa que poden arribar a danyar de gravetat la paret dels nostres intestins provocant mal-absorci\u00f3 de nutrients.<\/p>\n<p style=\"padding-left: 30px;\">2. La <strong>sensibilitat al gluten no cel\u00edaca<\/strong> \u00e9s una malaltia recent que, a difer\u00e8ncia de la malaltia cel\u00edaca, no danya el nostre intest\u00ed. El seu diagn\u00f2stic es realitza per descart d&#8217;altres malalties com la celiaquia, al costat de la millora dels s\u00edmptomes despr\u00e9s de fer una dieta lliure de gluten.<\/p>\n<p style=\"padding-left: 30px;\">3. L&#8217;<strong>al\u00b7l\u00e8rgia al blat<\/strong> \u00e9s una reacci\u00f3 d&#8217;hipersensibilitat cap al blat. D&#8217;aquesta manera, com en qualsevol altre cas d&#8217;al\u00b7l\u00e8rgia aliment\u00e0ria, s&#8217;ha d&#8217;eliminar de la dieta l&#8217;aliment que la provoca: el blat. Aix\u00f2 implica que la persona pot menjar la resta de cereals, independentment de si contenen gluten o no, ja que el problema no resideix en aquest nutrient.<\/p>\n<h3><strong>SEGUIR UNA DIETA LLIURE DE GLUTEN<\/strong><\/h3>\n<p>En persones que presenten celiaquia, o b\u00e9 sensibilitat al gluten no cel\u00edaca, l&#8217;\u00fanic tractament per millorar els s\u00edmptomes \u00e9s seguir una dieta exempta d&#8217;aquest nutrient. <strong>La seva alimentaci\u00f3 ha de seguir sent variada i equilibrada<\/strong>, per\u00f2, a difer\u00e8ncia de la resta de la poblaci\u00f3, aquestes persones han de buscar alternatives als aliments que contenen gluten.<\/p>\n<p>Pel que fa a les persones que no tenen cap problema de salut en relaci\u00f3 al gluten, <strong>no hi ha base cient\u00edfica que justifiqui l&#8217;eliminaci\u00f3, en l&#8217;alimentaci\u00f3 di\u00e0ria, d&#8217;aliments que contenen aquest nutrient.<\/strong> A m\u00e9s, per una banda, els productes dissenyats per la ind\u00fastria aliment\u00e0ria per a aquest tipus de dietes s\u00f3n m\u00e9s cars i, d&#8217;altra banda, la probabilitat de seguir una alimentaci\u00f3 desequilibrada en qu\u00e8 es produeixi manca de certs nutrients \u00e9s m\u00e9s alta.<\/p>\n<p>Finalment,<strong> la celiaquia \u00e9s una malaltia infradiagnosticada<\/strong>, aix\u00f2 vol dir que moltes persones pateixen la malaltia i no s\u00f3n conscients, ja que no sempre est\u00e0 subjecta a una simptomatologia espec\u00edfica. A m\u00e9s, si s&#8217;elimina el gluten de la dieta i no se sap que es t\u00e9 celiaquia, al tornar a introduir-lo, ja sigui per mitj\u00e0 de cereals com el <a href=\"https:\/\/nomen.es\/ca\/altre\/nomen-blat-tendre\/\" target=\"_blank\">blat<\/a>, el s\u00e8gol o la civada, o per productes derivats d&#8217;aquests, es pot contribuir a danyar l&#8217;intest\u00ed sense adonar-se&#8217;n.<\/p>\n<p>Si no tens cap problema amb aquest nutrient, <strong>deixa les tend\u00e8ncies a un costat i segueix una <a href=\"https:\/\/nomen.es\/ca\/com-preparar-menu-setmanal-variat-i-equilibrat\/\" target=\"_blank\">alimentaci\u00f3 variada i equilibrada<\/a> que inclogui tot tipus d&#8217;aliments<\/strong>.
