La Quaresma \u00e9s una \u00e8poca que s&#8217;inicia el Dimecres de Cendra, en qu\u00e8 els cristians commemoren els quaranta dies que Jes\u00fas va passar al desert. Durant aquest per\u00edode, el consum de carn queda restringit i \u00e9s tradici\u00f3 substituir-la per peix els divendres. S\u00f3n diversos els aliments t\u00edpics d&#8217;aquesta \u00e8poca, com els bunyols o els potatges de verdures, per\u00f2 sens dubte, el rei de quaresma \u00e9s el bacall\u00e0. Per aix\u00f2, avui us deixem algunes receptes de bacall\u00e0 per gaudir d&#8217;aquest peix amb els teus.<\/p>\n<h3 style=\"padding-left: 30px;\"><strong>1. Potatge de vig\u00edlia<\/strong><\/h3>\n<p style=\"padding-left: 30px;\"><strong>Ingredients per a 4 persones:<\/strong><\/p>\n<p style=\"padding-left: 30px;\">300g de cigrons secs, 300g de bacall\u00e0, 250g d&#8217;espinacs, 2 cebes mitjanes, 4 grans d&#8217;all, 1 ou, 1 fulla de llorer i oli d&#8217;oliva verge.<\/p>\n<p style=\"padding-left: 30px;\"><strong>Elaboraci\u00f3<\/strong>:<\/p>\n<p style=\"padding-left: 30px;\">Posa el bacall\u00e0 en un bol amb aigua un dia abans i canvia l&#8217;aigua cada 8 hores. La nit anterior, posa tamb\u00e9 els cigrons en un bol amb aigua. En una olla a pressi\u00f3 amb for\u00e7a aigua, posa els cigrons escorreguts, 2 grans d&#8217;all i la fulla de llorer durant 35 minuts aproximadament. Mentrestant, tallem la ceba en trossos petits i la sofregim a la paella amb un rajol\u00ed d&#8217;oli d&#8217;oliva. Quan comenci a estar daurada, afegeix els grans d&#8217;all restants i baixa el foc al m\u00ednim durant 5 minuts i reserva. En una olla posem aigua a bullir i cuinem l&#8217;ou. Reserva&#8217;l. Quan els cigrons estiguin llests, escorre&#8217;ls\u00a0en una altra olla (sense el llorer i sense l&#8217;all), amb part del brou de la cocci\u00f3 i deixa-ho a foc mitj\u00e0. Afegeix el sofregit al costat dels espinacs (rentats i tallats). Baixa el foc al m\u00ednim, esmicola el bacall\u00e0 i agrega&#8217;l a la cassola, remenant a poc a poc durant 5 minuts. Pela l&#8217;ou, talla en trossos petits i afegeix-lo al potatge en el moment de servir. Llest!<\/p>\n<h3 style=\"padding-left: 30px;\"><strong>2. Arr\u00f2s amb bacall\u00e0<\/strong><\/h3>\n<p style=\"padding-left: 30px;\"><strong>Ingredients per a 4 persones<\/strong>:<\/p>\n<p style=\"padding-left: 30px;\">400g de bacall\u00e0, 400g d&#8217;<a href=\"https:\/\/nomen.es\/ca\/arros\/arros-bomba-nomen\/\" target=\"_blank\">Arr\u00f2s Bomba Nomen<\/a>, 1 ceba gran, 2 tom\u00e0quets madurs, \u00bd pebrot vermell, 2 grans d&#8217;all, 60g de p\u00e8sols, dues fulles de llorer, cap de bacall\u00e0 o rap, un polsim de pebre vermell dol\u00e7, un polsim de safr\u00e0, oli d&#8217;oliva verge i sal.<\/p>\n<p style=\"padding-left: 30px;\"><strong>Elaboraci\u00f3<\/strong>:<\/p>\n<p style=\"padding-left: 30px;\">Posa el bacall\u00e0 en un bol amb aigua un dia abans i canvia l&#8217;aigua cada 8 hores. En una olla amb aigua bullint, afegeix les fulles de llorer i el cap de bacall\u00e0 o rap. Deixa-ho a foc mitj\u00e0 durant 15-20 minuts. Despr\u00e9s d&#8217;aquest temps, cola-ho i reserva el brou. Mentrestant, renta i pica les verdures. En una paella amb un raig d&#8217;oli d&#8217;oliva verge, afegeix la ceba. Un parell de minuts m\u00e9s tard afegeix tamb\u00e9 el pebrot i deixa-ho a foc lent durant 5 minuts, afegeix tamb\u00e9 el tom\u00e0quet triturat al costat del safr\u00e0 i l&#8217;all. Esmicola el bacall\u00e0 i afegeix-los al sofregit. Despr\u00e9s de 5 minuts, afegeix l&#8217;Arr\u00f2s Bomba de Nomen amb el pebre vermell i remou un parell de minuts. A continuaci\u00f3, afegeix el brou de peix que havies reservat pr\u00e8viament conjuntament amb els p\u00e8sols i deixa-ho a foc mitj\u00e0 durant 15 minuts.<\/p>\n<h3 style=\"padding-left: 30px;\"><strong>3. \u201cEsqueixada\u201d<\/strong><strong> de bacalao<\/strong><\/h3>\n<p style=\"padding-left: 30px;\"><strong>Ingredients per a 4 persones<\/strong>:<\/p>\n<p style=\"padding-left: 30px;\">500g de morro de bacall\u00e0, 1 ceba, 5 tom\u00e0quets madurs, olives negres, oli d&#8217;oliva verge i pebre negre m\u00f2lt.<\/p>\n<p style=\"padding-left: 30px;\"><strong>Elaboraci\u00f3<\/strong>:<\/p>\n<p style=\"padding-left: 30px;\">Posa el bacall\u00e0 en remull un dia abans i canvia l&#8217;aigua cada 8 hores. Renta&#8217;l i escorre l&#8217;aigua sobrant. Esmicola&#8217;l a tires i reserva. En un plat, ratlla el tom\u00e0quet i afegeix-li oli d&#8217;oliva verge i un pessic de pebre negre m\u00f2lt. Barreja b\u00e9. Talla la ceba en juliana i les olives en meitats. Col\u00b7loca la ceba i les olives sobre el tom\u00e0quet i el bacall\u00e0 a la part superior. Llest!<\/p>\n<h3 style=\"padding-left: 30px;\"><strong>4. Bacalao a la vizca\u00edna<\/strong><\/h3>\n<p style=\"padding-left: 30px;\"><strong>Ingredients per a 4 persones<\/strong>:<\/p>\n<p style=\"padding-left: 30px;\">500g de bacall\u00e0, 2 cebes grans, 3 grans d&#8217;all, 1 llesca de pa, 2 cullerades de salsa de tom\u00e0quet, 5 nyores, 425ml d&#8217;aigua, sal i oli d&#8217;oliva.<\/p>\n<p style=\"padding-left: 30px;\"><strong>Elaboraci\u00f3: <\/strong><\/p>\n<p style=\"padding-left: 30px;\">Posa el bacall\u00e0 en remull un dia abans i canvia l&#8217;aigua cada 8 hores. Una hora abans, posa els pebrots en remull. Transcorregut aquest temps, renta els pebrots i deixa&#8217;ls 1 minut en una olla bullint. Retira, canvia l&#8217;aigua i repeteix el proc\u00e9s. Treu-la carn i reserva-la. Talla la ceba en trossos petits, pica l&#8217;all i esmicola el pa. En una paella amb oli d&#8217;oliva sofregeix la ceba i, quan comenci a daurar-se, afegeix l&#8217;all i el pa. Despr\u00e9s d&#8217;un parell de minuts, afegeix la carn dels pebrots, la salsa de tom\u00e0quet i l&#8217;aigua, remou i cou a foc mitj\u00e0 durant 20 minuts. Mentrestant, renta i seca el bacall\u00e0. En un paella, marca-ho per les dues bandes i reserva. Triturar la salsa fins que quedi homog\u00e8nia, afegeix-se de nou a la cassola amb\u00a0del bacall\u00e0.
