Et portem una mica d&#8217;hist\u00f2ria sobre el cusc\u00fas i et proposem una recepta per integrar-lo en la teva alimentaci\u00f3.<\/p>\n<h2><strong>Qu\u00e8 \u00e9s el cusc\u00fas?<\/strong><\/h2>\n<p>El cusc\u00fas \u00e9s un preparat a partir de s\u00e8mola, habitualment s\u00e8mola de blat, encara que tamb\u00e9 es pot fer d&#8217;altres cereals, com mill, arr\u00f2s, ordi&#8230; per\u00f2 el cusc\u00fas de s\u00e8mola de blat \u00e9s el m\u00e9s usat tradicionalment i, al que ens referirem en aquest article.<\/p>\n<h2><strong>Quin \u00e9s l&#8217;origen del cusc\u00fas?<\/strong><\/h2>\n<p>L&#8217;origen del cusc\u00fas, encara que \u00e9s incert, hi ha for\u00e7a consens en que t\u00e9 un origen nord-afric\u00e0, i en qu\u00e8 va ser portat a Andalusia a l&#8217;\u00e8poca de l&#8217;Al-Andalus. Aix\u00f2 es va descobrir al trobar-se un llibre de cuina d&#8217;aquesta \u00e8poca amb la primera recepta de cusc\u00fas. Un altre dels motius pels quals es creu que el cusc\u00fas \u00e9s originari del nord d&#8217;\u00c0frica \u00e9s per ser plat nacional del Marroc, Tun\u00edsia i Alg\u00e8ria.<\/p>\n<h2><strong>Quines s\u00f3n les caracter\u00edstiques nutricionals del cusc\u00fas?<\/strong><\/h2>\n<p>El cusc\u00fas \u00e9s un aliment farinaci, amb un elevat contingut d&#8217;hidrats de carboni complexos i \u00e9s font de prote\u00efnes vegetals i t\u00e9 un baix contingut en greixos, en general tamb\u00e9 pot ser font de f\u00f2sfor. A causa que els hidrats de carboni s\u00f3n complexos i cont\u00e9 fibra, el seu \u00edndex glic\u00e8mic \u00e9s moderat.<\/p>\n<h2><strong>Com es cuina el cusc\u00fas?<\/strong><\/h2>\n<p>La preparaci\u00f3 tradicional del cusc\u00fas es fa a partir de s\u00e8mola de blat dur. Aquesta s&#8217;hidrata amb aigua i es fa rodar amb les mans per formar les petites boletes de s\u00e8mola, que s&#8217;han de quedar soltes i sense endurir. A continuaci\u00f3, es tamisa perqu\u00e8 els gr\u00e0nuls massa petits passin pel tam\u00eds i no es quedin en la preparaci\u00f3. Com aquest proc\u00e9s \u00e9s molt labori\u00f3s, antany feien grans quantitats i les assecaven al sol per guardar-lo i consumir-lo en diverses vegades.<\/p>\n<p>El cusc\u00fas tradicionalment es cuinava al vapor, de manera que els petits gr\u00e0nuls de s\u00e8mola es van hidratant amb el vapor d&#8217;aigua, i s&#8217;ha d&#8217;anar remenant cada 10 &#8211; 15 minuts amb les mans perqu\u00e8 no quedi endurit. La base de la vaporera era utilitzada per cuinar la carn o les verdures, i el cusc\u00fas es cuinava amb els vapors que es desprenien del guisat de les verdures i la carn, i aix\u00ed es impregnava amb el sabor dels aliments que ho anaven a acompanyar.<\/p>\n<h2><strong>Com incloure el cusc\u00fas en la teva alimentaci\u00f3?<\/strong><\/h2>\n<p>El cusc\u00fas, com s&#8217;ha comentat anteriorment, \u00e9s un aliment bastant vers\u00e0til, admet preparacions dolces i salada, tant calentes com fredes. Pots preparar-lo com a plat principal, acompanyament o postres. Aquesta recepta tradicional de cusc\u00fas marroqu\u00ed pot ser un exemple.<\/p>\n<h2><strong>Recepta de cusc\u00fas marroqu\u00ed<\/strong><\/h2>\n<p><strong>Ingredients <\/strong>(4 persones):<\/p>\n<ul>\n<li>250g de <a href=\"https:\/\/nomen.es\/ca\/altre\/cuscus-nomen\/\" target=\"_blank\" rel=\"noopener\">Cusc\u00fas Nomen<\/a><\/li>\n<li>100g de cigrons cuits<\/li>\n<li>100g de xai<\/li>\n<li>1 ceba<\/li>\n<li>2 tom\u00e0quets madurs<\/li>\n<li>2 pastanagues<\/li>\n<li>1 nap<\/li>\n<li>50g de carbassa<\/li>\n<li>1 carbass\u00f3<\/li>\n<li>1L de brou de verdures<\/li>\n<li>1 culleradeta de c\u00farcuma<\/li>\n<li>1 culleradeta de gingebre ratllat<\/li>\n<li>1 fulla de llorer<\/li>\n<li>1 brot de julivert<\/li>\n<li>1 brot de coriandre<\/li>\n<li>20g oli d&#8217;oliva verge extra<\/li>\n<li>Un polsim de pebre negre m\u00f2lt<\/li>\n<li>Bitxos m\u00f2ltes<\/li>\n<li>Brins de safr\u00e0 al gust<\/li>\n<\/ul>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Elaboraci\u00f3:<\/strong><\/p>\n<ol>\n<li>Esbandeix els cigrons cuits i reserva\u2019ls.<\/li>\n<li>Renta b\u00e9 els vegetals, pela&#8217;ls i talla la meitat de la ceba a tires, la resta de la ceba i els altres vegetals a daus d&#8217;un dit m\u00e9s o menys, i reserva\u2019ls.<\/li>\n<li>Talla el xai a daus i reserva&#8217;l.<\/li>\n<li>Salta les tires de ceba en una olla amb una mica d&#8217;oli durant uns minuts.<\/li>\n<li>A continuaci\u00f3, afegeix els trossos de carn, les esp\u00e8cies, el brou i el tom\u00e0quet, i cou a foc mitj\u00e0 i amb l&#8217;olla tapada.<\/li>\n<li>Quan comenci a bullir afegeix els cigrons i cuina fins que el xai quedi tendre.<\/li>\n<li>Afegeix la resta de les verdures excepte el carbass\u00f3 i deixa que es coguin.<\/li>\n<li>Quan estiguin gaireb\u00e9 cuites del tot, afegeix el carbass\u00f3 i deixa coure 10 minuts m\u00e9s.<\/li>\n<li>Mentre s&#8217;acaba de coure pots afegir la pols de bitxo i el pebre.<\/li>\n<li>Mentre s&#8217;acaba de coure el carbass\u00f3, cou el cusc\u00fas.<\/li>\n<li>Per coure el cusc\u00fas, mesura el mateix volum d&#8217;aigua que de cusc\u00fas, posa\u2019l en un bol i l&#8217;aigua a bullir en un cass\u00f3 i, quan l&#8217;aigua arrenqui el bull, aboca l&#8217;aigua al bol amb el cusc\u00fas, remena i deixa-ho tapat durant 5 minuts perqu\u00e8 s&#8217;hidrati.<\/li>\n<li>Un cop hagi absorbit l&#8217;aigua, remou per a que no es pegui el cusc\u00fas i afegeix-li el brou amb les verdures i la carn.<\/li>\n<li>Remou a l&#8217;olla i serveix en plats.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Pots trobar unes altres 3 delicioses receptes de cusc\u00fas en <a href=\"https:\/\/nomen.es\/ca\/3-receptes-originals-amb-cuscus\/\" target=\"_blank\" rel=\"noopener\">aquest article<\/a> de principis d&#8217;any per incloure-ho en la teva alimentaci\u00f3.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Saps qu\u00e8 \u00e9s el cusc\u00fas? \u00bfEncara no ho has afegit a la teva alimentaci\u00f3?
