Creus que l&#8217;ou fa pujar el colesterol en sang? Des de fa anys l&#8217;ou s&#8217;ha catalogat d&#8217;una manera negativa en l&#8217;alimentaci\u00f3. A causa de que el seu contingut en colesterol \u00e9s bastant abundant, es creia que augmentava el colesterol en sang. Per aix\u00f2 es recomanava limitar el seu consum, sobretot quan hi havia risc cardiovascular. Actualment, s&#8217;ha vist que aix\u00f2 no \u00e9s aix\u00ed.<\/p>\n<p>Quan es parla d&#8217;ou, en general s&#8217;entenen ous de gallina. <strong>Encara que hi ha una gran varietat d&#8217;ous<\/strong> d&#8217;aus que es consumeixen, <strong>els m\u00e9s habituals s\u00f3n els ous de gallina<\/strong> i s\u00f3n dels que parlarem.<\/p>\n<p>&nbsp;<\/p>\n<h2>Quina \u00e9s la composici\u00f3 nutricional de l&#8217;ou?<\/h2>\n<p><strong>L&#8217;ou t\u00e9 un gran valor nutritiu.<\/strong> Aix\u00f2 \u00e9s pel seu contingut en prote\u00efnes, que s\u00f3n de molt bona qualitat, ja que s\u00f3n d&#8217;alt valor biol\u00f2gic. <strong>La prote\u00efna de l&#8217;ou t\u00e9 un perfil d&#8217;amino\u00e0cids molt bo.<\/strong><\/p>\n<p>Sab\u00edeu que la FAO (Organitzaci\u00f3 per a l&#8217;Agricultura i l&#8217;Alimentaci\u00f3) i altres institucions de refer\u00e8ncia usen la prote\u00efna de l&#8217;ou com a model pel que fa a proporci\u00f3 d&#8217;amino\u00e0cids? Sobretot, en el cas d&#8217;amino\u00e0cids essencials.<\/p>\n<p>La part comestible de l&#8217;ou es divideix en dues parts:<\/p>\n<h3>La clara<\/h3>\n<p><strong>Composta essencialment per prote\u00efnes.<\/strong> Hi ha diversos tipus de prote\u00efnes de l&#8217;ou, per\u00f2 les que predominen en la clara s\u00f3n les ovoalb\u00famines, que superen el 50%. A m\u00e9s, <strong>en la clara podem trobar sucres i alguns minerals.<\/strong><\/p>\n<h3>El rovell<\/h3>\n<p>\u00c9s <strong>una emulsi\u00f3 de l\u00edpids i prote\u00efnes. En el rovell es troba pr\u00e0cticament tot el greix de l&#8217;ou<\/strong>, que podem trobar en forma de triglic\u00e8rids, fosfol\u00edpids (on predominen l&#8217;\u00e0cid linoleic, \u00e9s a dir, omega-6) i colesterol. <strong>Cont\u00e9 una gran quantitat d&#8217;antioxidants, com les vitamines A i E i betacarotens.<\/strong> Aquests \u00faltims s\u00f3n els responsables d&#8217;aportar aquesta coloraci\u00f3 ataronjada al rovell.<\/p>\n<p>&nbsp;<\/p>\n<h2>L&#8217;ou fa que el colesterol pugi?<\/h2>\n<p>Com s&#8217;ha esmentat anteriorment, l&#8217;ou t\u00e9 un alt contingut en colesterol, per aix\u00f2 es creia que feia augmentar els seus valors en sang i, per aix\u00f2, es limitava el seu consum. Actualment, s&#8217;ha demostrat que, <strong>dins d&#8217;un marc d&#8217;alimentaci\u00f3 saludable, consumir un ou al dia no augmenta el colesterol en sang.<\/strong><\/p>\n<p>Alguns productes amb quantitats molt elevades de colesterol s\u00ed que poden pujar els nivells en sang, el factor que fa que m\u00e9s augmenti \u00e9s el consum de greixos saturats i greixos trans. Per contra, <strong>les persones que pateixen diabetis s\u00ed que han de limitar el consum a 3 ous sencers a la setmana.<\/strong><\/p>\n<p>Algunes publicacions comenten que <strong>el problema no \u00e9s el consum dels ous, sin\u00f3 en com estan cuinats o en el seu acompanyament.<\/strong> A Am\u00e8rica del Nord l&#8217;esmorzar t\u00edpic est\u00e0 compost d&#8217;ous, salsitxes, bac\u00f3 i tortitas. A Anglaterra els acompanyen amb salsitxes, botifarra, pernil i mongetes.<\/p>\n<p>A Espanya, l&#8217;acompanyament per excel\u00b7l\u00e8ncia dels ous s\u00f3n les patates fregides.
