Sembla molt m\u00e9s complicat del que en realitat \u00e9s. <strong>Nom\u00e9s necessites s\u00e8mola d&#8217;algun cereal i aigua.<\/strong> La majoria de la gent tamb\u00e9 fa servir ou per millorar la textura i que sigui m\u00e9s f\u00e0cil de treballar.<\/p>\n<p>T&#8217;expliquem com fer pasta fresca casolana amb la <a href=\"https:\/\/nomen.es\/ca\/semola\/semola-de-blat\/\" target=\"_blank\" rel=\"noopener\">S\u00e8mola de Blat Nomen<\/a> i la <a href=\"https:\/\/nomen.es\/ca\/semola\/semola-de-arros\/\" target=\"_blank\" rel=\"noopener\">S\u00e8mola d&#8217;Arr\u00f2s Nomen<\/a>.<\/p>\n<p>&nbsp;<\/p>\n<h2>Recepta per fer pasta fresca casolana<\/h2>\n<p><strong>Ingredients <\/strong>(per a 2 persones):<\/p>\n<ul>\n<li>200g de s\u00e8mola<\/li>\n<li>1 ou<\/li>\n<li>1 cullerada sopera d\u2019oli d\u2019oliva<\/li>\n<li>(condiment)<\/li>\n<li>Aigua<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Elaboraci\u00f3<\/strong>:<\/p>\n<ol>\n<li><strong>Afegeix en un bol la s\u00e8mola, l&#8217;ou, l&#8217;oli i un parell de cullerades soperes d&#8217;aigua i barreja<\/strong> b\u00e9 amb una esp\u00e0tula. Si vols afegir algun condiment ,com esp\u00e8cies, o pots donar sabor a la pasta amb algun vegetal. Et donem algunes idees: tom\u00e0quets deshidratats, alf\u00e0brega, espinacs, tinta de calamar, olives, remolatxa&#8230; Tingues en compte que, si afegeixes vegetals, pot ser que no necessitis aigua d&#8217;addici\u00f3 i que necessitis afegir m\u00e9s quantitat de s\u00e8mola. Tot dep\u00e8n del seu contingut d&#8217;aigua.<\/li>\n<li>Quan els ingredients estiguin m\u00e9s o menys integrats, <strong>comen\u00e7a a pastar la pasta<\/strong> al marbre, amb les mans i amb for\u00e7a, m\u00e9s o menys <strong>durant 5 minuts. Despr\u00e9s deixa-la reposar entre 10 i 15 minuts.<\/strong><\/li>\n<li><strong>Estira la massa.<\/strong> Per estirar i aplanar la massa el m\u00e9s c\u00f2mode \u00e9s utilitzar una m\u00e0quina de pasta. Per\u00f2 si no tens, ho pots fer de la manera tradicional amb un corr\u00f3 de fusta.<\/li>\n<\/ol>\n<p>Si la vas a estirar amb la m\u00e0quina, \u00e9s millor que l\u2019aplanis una mica abans i que obris del tot els rodets. A mesura que passes la massa, ves tancant els rodets perqu\u00e8 quedi fina.<\/p>\n<p>Si ho fas manualment amb el corr\u00f3, vigila que tota la massa quedi m\u00e9s o menys amb el mateix gruix.<\/p>\n<ol start=\"4\">\n<li>A continuaci\u00f3, <strong>talla la pasta de la manera que vulguis<\/strong>. En quadrats per lasanya, en tallarines, rigattone, fetuchini&#8230; Per tallar les tallarines i els fetuchini el m\u00e9s f\u00e0cil \u00e9s doblar en 3 o 4 parts la massa perqu\u00e8 els talls siguin m\u00e9s rectes.<\/li>\n<li>Un cop tinguis la massa pots coure-la o deixar-la assecar.<\/li>\n<\/ol>\n<p>Per assecar-la has de deixar-la en una barra perqu\u00e8 es ventili durant unes hores. Si la seques b\u00e9 i la guardes en un recipient herm\u00e8tic, et pot durar fins a 2 dies. Si la congeles, dura fins a 2 mesos.<\/p>\n<p>Si la vols cuinar, \u00e9s recomanable deixar-la assecar uns 30 minuts. D&#8217;aquesta manera perdr\u00e0 una mica d&#8217;aigua i no quedar\u00e0 passada. Tamb\u00e9 la pots coure quan la tinguis acabada. Per bullir-la has de posar aigua abundant en una olla amb un floc de sal i tirar la pasta quan l&#8217;aigua ja estigui bullint. No la llencis abans, quedar\u00e0 tova i passada. Bull la pasta durant 2 o 3 minuts depenent del gruix. Tingues en compte que no s&#8217;ha d\u2019hidratar com la pasta seca, \u00e9s tan sols perqu\u00e8 es cogui una mica la s\u00e8mola.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>En el cas que siguis veg\u00e0 o tinguis al\u00b7l\u00e8rgia a la prote\u00efna de l&#8217;ou, pots fer la pasta sense ou.<\/strong> Nom\u00e9s haur\u00e0s d&#8217;afegir m\u00e9s aigua segons et demani la massa, aproximadament 50ml.<\/p>\n<p>&nbsp;<\/p>\n<h2>Consells per elaborar la perfecta pasta fresca<\/h2>\n<h3>No afegeixis tota l&#8217;aigua al principi<\/h3>\n<p>Afegeix l&#8217;aigua segons la massa la vagi necessitant, aix\u00ed no et passar\u00e0s i no ser\u00e0 necessari afegir m\u00e9s s\u00e8mola.<\/p>\n<h3>Pastat f\u00e0cil<\/h3>\n<p>Si veus que et costa molt pastar la pasta, deixa-la reposar uns minuts i torna a pastar. De vegades la massa es posa dura i necessita reposar.<\/p>\n<h3>Que la massa no s&#8217;enganxi<\/h3>\n<p>Enfarina la superf\u00edcie en la que vagis a treballar perqu\u00e8 no s&#8217;enganxi la massa, pots fer-ho amb farina o amb s\u00e8mola, aix\u00f2 s\u00ed, intenta que sigui del mateix cereal que est\u00e0s fent la pasta.<\/p>\n<h3>Deixa reposar la pasta<\/h3>\n<p>No bullis la pasta just al acabar-la, deixa que s&#8217;assequi un parell d&#8217;hores i despr\u00e9s cou. Aix\u00f2 li permetr\u00e0 eliminar una mica d&#8217;humitat, aix\u00ed es podr\u00e0 quedar una mica m\u00e9s de temps a l&#8217;aigua bullint i que la s\u00e8mola del cereal es cogui millor.<\/p>\n<h3>La pr\u00e0ctica fa al mestre<\/h3>\n<p>Arma&#8217;t de paci\u00e8ncia, l&#8217;elaboraci\u00f3 de pasta \u00e9s una mica costosa, sobretot la primera vegada, per\u00f2 despr\u00e9s resulta m\u00e9s senzill.
