La xef amb una Estrella Michelin Fran L\u00f3pez ens Compta els secrets perqu\u00e8 quedi perfecte! &#x1f958;&#x1f924;<\/p>\n<h2><strong>Elaboracions de l&#8217;arr\u00f2s d&#8217;\u00e0nec i carxofes<\/strong><\/h2>\n<h3><strong>Per el sofregit de tom\u00e0quet:<\/strong><\/h3>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 quilos de ceba a juliana<\/p>\n<p>2 quilos de tom\u00e0quet pera madur<\/p>\n<p>1\/2 caps d&#8217;all<\/p>\n<p>1 branqueta de farigola<\/p>\n<p>Posem en una cassola el mig cap d&#8217;all pelat i laminat, un cop daurats afegim la ceba a juliana, la farigola i anem fregint a foc no gaire fort fins que queda ben caramel\u00b7litzada, mentre es va coent la ceba, netegem els tom\u00e0quets els traiem el pedicle, els fem una creu a la part superior i els disposem en una safata. Un cop tots els tom\u00e0quets preparats els escaldem durant uns minuts depenent del madurs que estan, transcorregut el temps els pelem els tallem a quarts i els traiem els cors reservant nom\u00e9s la polpa del tom\u00e0quet. Un cop tinguem tot el tom\u00e0quet net i la ceba ben caramel\u00b7litzada ho ajuntem i seguim cuinant fins que el tom\u00e0quet quedi ben caramel\u00b7litzat vigilant constantment per evitar que se&#8217;ns enganxi. Quan ja estigui tot ben cuinat, rectifiquem de sal i sucre, ho triturem b\u00e9 i ho passem per un colador de malla no molt fi, el reservem i ho deixem refredar a la nevera.<\/p>\n<h3><strong>Per el brou d\u2019aus:<\/strong><\/h3>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>&#8211;<\/strong>1 carcassa de pollastre<\/p>\n<p>-1 carcassa de d\u2019\u00e0nec<\/p>\n<p>-2 pastanagues pelades<\/p>\n<p>-2 cebes<\/p>\n<p>-1 porro<\/p>\n<p>-1 branqueta d\u2019api<\/p>\n<p>-6 boletes de pebre en gra<\/p>\n<p>En una olla gran posem la carcassa de pollastre i la carcassa d&#8217;\u00e0nec que podem aconseguir a la carnisseria de confian\u00e7a, afegim totes les verdures pr\u00e8viament netes i pelades al costat de les boletes de pebre en gra, cobrim d&#8217;aigua freda i ho posem al foc. Una cop arrenqui el bull ho deixem a foc lent durant 4 hores. Transcorregut el temps retirem del foc, ho colem per un colador xin\u00e8s i reservem.<\/p>\n<h3><strong>Per la elaboraci\u00f3 de l\u2019arr\u00f2s <\/strong><strong>d&#8217;\u00e0nec i carxofes<\/strong><\/h3>\n<p>En una paella posem un bon raig d&#8217;oli d&#8217;oliva verge extra, un cop calent marquem les cuixes d&#8217;aus pr\u00e8viament tallats i salpebrats, quan estigui la carn ben daurada hi afegim les carxofes tornejades i tallades a quarts, ofeguem b\u00e9, tot seguit afegim l&#8217;all ben picat un cop daurat afegim el sofregit de tom\u00e0quet i el brou d&#8217;aus i deixem bullir durant una hora aproximadament aprofitant per rectificar de sal i afegir m\u00e9s brou d&#8217;aus a l&#8217;anar reduint-se. Transcorregut el temps i amb el brou ja rectificat afegirem l&#8217;arr\u00f2s procurant que el brou estigui bullint ben fort per afavorir la seva cocci\u00f3, deixarem bullir a foc fort durant 5 minuts i baixarem a foc mitj\u00e0 durant 10 minuts m\u00e9s.
